Sprout & Sautee: Cooking and Gardening at the Lab

My Students

Everybody has a story to tell and everyone wants to be heard. It's with this philosophy that we approach our work in The Lab, a program serving urban youth in special education.

The students with whom we work have the special educational label of EBD (Emotional- Behavioral Disorder).

Our students attend this small school program because their behaviors prevent them from achieving success in a mainstream classroom setting. Here, they get more behavioral and academic supports by more adults in a smaller classroom setting. 85% of students in our EBD programs receive free or reduced price lunch; the majority (80%) are male and youth of color, primarily African American. These youth are affected by a variety of social and mental health challenges, including post-traumatic stress disorder, attention-deficit hyperactivity disorder, oppositional defiance disorder, anxiety and/or depression. For many of our students their behavioral and mental health struggles are linked to challenging circumstances of living in a culture of racism and the realities of living in poverty.

My Project

One of the best ways for students to come together is around food. Cooking at the Lab has been an huge success, providing an easy space for students to practice leadership, patience, and confidence, share about their lives, and build community. Gardening is also a powerful tool with our students. Lacking a garden, this spring we grew personal sized plants and sent them home. Students learned care-taking responsibility and had a safe space to go (full of plants) to calm themselves in a moment of anger. In this project, my students will use the tools you help us purchase to delve into the Wellness curriculum. Students will learn culinary arts, explore chemistry and biology concepts, serve a meal to peers and family members, build a raised bed garden, grow fresh vegetables, learn about restaurant, agricultural and health careers, and design action projects around health justice in their community. This project will provide the tools for students to learn practical skills in cooking and gardening, integrated with career, health, and justice education.

Cooking and gardening will keep students motivated and inspired at school. With your help, we can continue to support these students to gain the courage to speak about their lives, gain healthy coping strategies, and find success at school.
