About My Students

My students are energetic and fascinated with all things about food. They range from grades 9-12, and the majority come from low-income households. We are a diverse group that spans over two dozen countries of origin. Student leaders Hector, Elizabeth, Nathaniel, Devianna, and James will be overseeing our project daily during each of their class periods. Each of them has excelled this year in taking a leadership role for the various classroom, lab, and after school activities for the Food Studies program.

STEM studies are directly connected to the modern technology of hydroponic gardening. This method uses limited space for maximum output and is environmentally friendly. Hydroponics uses water and saves the cost of maintaining soil materials. The students will study the growth rate versus traditional gardening methods which are expected to be 30-40% higher. This project will be completed in the Science of Cooking and Nutrition courses and will show the students how STEM connects to real life activities. This will be a team project that will help them learn ways to grow sustainable food for a better tomorrow.

In Their Own Words

Many believe their only option is to buy cheap and processed food and that they are not able to grow their foods in an urban setting. The students would like to create an indoor hydroponic garden in our food studies classroom to learn how to grow edible plants in an indoor space and apartment settings.

Being a student leader for our indoor garden will allow me a chance to see the process from start to finish and get to try new herbs and vegetables in our cooking. This is something I can share with my family and with other people in my neighborhood so others can learn how to grow their own foods.

By learning how to grow our own food we can always have food available at a cheaper price. This will be the first time I will have to try organic foods compared to the vegetables in the grocery store. I want to be able to have a garden of my own to share with my brothers and sisters at home.
