"Cardboard pizza" and "Frozen juice" are the most frequent complaints my students express about school lunches. They want to eat nourishing and comforting food, and often our school lunches do not offer a range of choices they like, or provide sufficient calories to see them through the day. But as we've explored student food choices in previous classes, we often find students don't know how to evaluate food choices, or even where their food comes from. Students are astonished to learn the impact on American health that arises from industrial food production. Their past research projects indicate they want to know more, and I often welcome 7th and 8th graders back to "Keepers of the Earth" as repeat participants. Students know we will inquire deeply into relevant science topics of environmental sustainability that affect their lives directly and profoundly. The valuable knowledge they take away empowers students and their families to make better-educated, healthier food choices.
