Students will truly understand the meaning of "reaping what you sow." The use of the raised beds will help my students "think" beyond the ground. By utilizing raised beds, they can envision planting their food in available resources-such as flower pots, barrels, etc. Most all of my students stay in apartments or rented residences, this allows them to take their garden with them. I have created an assignment for students to create a raised garden with items that can be recycled and repurposed. For instance, students will have to create a "herb wall" with only recycled items. My students and their family will rotate taking care of the garden on the weekends and holidays. This empowers the students to have accountability, not only for their harvest but their community. Our harvest will be utilized in our culinary labs, and students will be able to take what they need for their meals at home. Gardening for my students is a mental outlet. Many of my bonding moments with my students were harvested here. Getting our hands dirty gave not only my students a place to clear their mind, but it help open their hearts.
