Hello Generous Souls, Call me crazy but I teach middle school. My name is Kathleen Albiani and my previous job was as a chef instructor at a local culinary college. This new experience with 7th and 8th graders has been a big change for me. What hasn't changed, however, is the students' interest in cooking! They love it. From college to preteen, good food is universally exciting. Today we made our first batch of snickerdoodles and they were pretty darned good, if I can brag a little. I like to focus on healthy foods and nutrition in my classes, but the occasional treat never hurt anyone. I feel that cooking is an essential life skill like reading, riding a bike, or swimming. I can't remember the last time I did algebra, but I ate three yummy meals just yesterday. Food is one of the great pleasures in life and its preparation and enjoyment should be learned and appreciated by all.
